Freekeh Farmers [2016] Photo assignment for USAID

Freekeh harvest done by local women in the villages of the Beqaa Valley in eastern Lebanon.

Freekeh, the roasted green wheat, has been gaining popularity in the last few years as a nutritious food rich in proteins and fibers. To benefit from the promising economic potential freekeh offers, the USAID funded projects that introduce Lebanese farmers to a new wheat variety that can prosper on their soil. I photographed these women who came together to shows us the full process of harvesting and cooking freekeh from the farm to the table.
